I'm curious...are those wall sections each induvidual squares, or are they each a small "section" of tunnel?

Individual physical boxes, for purposes of interior assembly (with the possibility of destructibility).

Well, the full set of options depicted earlier, yes. That small demo corridor was thrown together in 2 minutes. Bio Raid X really was a tug of war between supreme-modding-streamline and supreme-Tres-puzzle/feature-achievement.
